Camping Breakfast Ideas – We all need them! And these make-ahead breakfast burritos are not only tasty, they're super easy to throw together and freeze well before your camping trip!

The early morning hours are some of my favorites when we're out camping. Watching the sun peek up over whatever beautiful horizon we happen to have the pleasure of watching is nothing short of spectacular.

I'm usually wrapped up in a blanket, cradling a hot cup of Joe (check out this post to see how I like to make my camping coffee), and enjoying a morning fire (if I'm lucky!) And while I love camp cooking, sometimes I don't want to interrupt my glorious morning to whip up breakfast for the gang. (Although, these boil in a bag camping eggs are pretty darn easy, too!)

So camping breakfast ideas are essential. Especially those that can be made ahead, frozen, and popped into the camp oven (here's the one I have and love!) or warmed up over that beautiful morning campfire.

And that's where these easy make-ahead breakfast burritos come in. Loaded with eggs, sausage, cheese, salsa, and, yes, even a few tater tots, these camping burritos are one of the easiest and best camping breakfast ideas ever!

I love to make these ahead of our camping trip, freeze them, and pull them out the night before I'm going to serve them to thaw them out so we can have a quick heat and eat breakfast, but they're just as good if you make them the same morning you plan to eat them!

How to Make One of the Best Camping Breakfast Ideas – Burritos!

Brown some ground sausage in a large skillet until fully cooked and remove from pan. Set aside. Scramble eggs in the pan you used for the sausage until cooked. Add some shredded cheese and salsa, then return the sausage to the skillet. Mix well. Grab a burrito sized flour tortilla and spoon the mixture into the center of the burrito.

Add tater tots, if using (cooked according to package directions), then fold the sides up and roll end to end, making a fully enclosed burrito. (Full Recipe Below).

To Make Ahead and Freeze:

Spray a piece of foil with nonstick spray for each burrito. Wrap individually and store in freezer. Remove from freezer and place in the refrigerator the evening before you plan to serve them.

Pull them out of the fridge an hour before you plan to heat them up. Heat a camp oven, grill (I love my camp grill), or campfire. Place wrapped burritos in warm oven or grill and heat until warm (this usually takes about 20 minutes), turning occasionally. Serve with additional salsa and sour cream. These breakfast burritos are one of my very favorite go-to camping breakfast ideas. I've served them in the beautiful mountains of Colorado, the high desert of Arizona, the plains of South Dakota, and even at my favorite music festival (Country Thunder, anyone??) They are always a hit!

Ingredients

  • 2 cups frozen tater tots, optional
  • 8 flour tortillas, burrito size
  • 1 pound spicy ground sausage
  • 12 eggs
  • 2 cups shredded cheese, Mexican blend
  • 1/2 cup salsa

Instructions

  1. Make tater tots according to package directions, if using.
  2. In a large skillet, cook sausage until crumbly and fully cooked. Remove cooked sausage and set aside.
  3. In the same pan, scramble eggs and add salsa at the end and fully combine.
  4. In a large bowl, combine egg/salsa mixture, cheese, sausage and mix together. Then fold in the cooked tater tots.
  5. Divide equally among the 8 tortillas. Fold ends of tortillas in then roll to close. Wrap individually in aluminum foil that has been sprayed with non-stick spray and freeze.
  6. Move from freezer to refrigerator the day before planning on eating.
  7. Heat camp oven to 325 degrees or start camp grill or campfire. Heat for 20 minutes or until heated through.
